Barberries are used to prepare and garnish foods and salads. Barberry juice is a flavorful, beneficial product. The fruit contains protein, sugar, fiber and carbohydrates and is described as having preventive and therapeutic uses for many illnesses. Dried red barberries have 2 main groups: Daneh Anari, also called Kharmani, and the type referred to as Zir-Talari or Pofaki. Pofaki is named for its plump appearance. The main distinction is the drying method: ordinary or Daneh Anari barberries are sun-dried on clay-and-straw ground, while Pofaki barberries dry gradually in covered sheds. Full drying takes 4 to 6 months. The fruit dries on its branches and is shaken off when collected from the sheds.
